A simple yet perfectly healthy low Fodmap dessert is the offering today. Even though the weather is still cold here in New Zealand, I can't get that extreme heat in Europe out of my mind. I never thought I'd say that I prefer the cold over the heat but at the moment I do. The only thing that gave any relief over in Europe was a lovely luscious ice cream - remember I don't malabsorb lactose. However, when I create a recipe for this blog, I take into account the 25% of you with IBS who do malabsorb lactose, and this is appropriate for you. However, if you don't have lactose issues, you could replace half the yogurt with whipped cream if you wanted to. You could also use any low Fodmap fruit though be careful of those that are too watery or ice crystals will form. The coconut can also be replaced with various other flavour enhancers. Banana Pancakes – low FODMAP breakfast or dessert
I have been corresponding with a dietitian, Clarice Hebblethwaite, who champions the low Fodmap diet and she has given me some interesting advice on healing the gut while on the diet. Take digestive bitters, ½ lemon juice or 1 dessertspoon apple cider vinegar in a little water before meals to increase acid levels in the stomach. Consider including daily fermented/cultured foods. These are foods which healthy bacteria or yeasts feed on. So all the fermenting and production of gas happens over a few days/ weeks and most importantly not in your body! So these foods are no longer fermentable or FODMAP rich. The resulting food is very rich in probiotic bacteria and yeasts which keep your digestive tract and immune system in good health. Jam Cookies – Gluten-Free Recipe and low FODMAP
I have another simple cookie recipe for you, using a clever method of activating the properties of the tapioca flour before adding it to other ingredients. This is also a recipe best eaten fresh and not stored. Coconut flour is not great for storage because it continues to absorb moisture from the room and the cookies become too soft. As always, I am full of plans followed by action and I have another one afoot but I can't tell you about it for a few weeks. I hope it comes off because I am investing a lot of myself into it. Peanut Butter Banana Muffins – gluten, grain, dairy and sugar-free
This is the simplest recipe ever. It was given to me by my niece - thank you, Kirsty. It has a minimum of ingredients and no flour or sugar at all. And yet they turned out looking and tasting just like muffins should. Who would have thought it! I love making elaborate slices and tarts but sometimes a batch of quick muffins is just what's needed. I made some marshmallow, caramel, chocolate bars for a guest post last weekend and Adriano didn't like them. He prefers the simplicity of muffins or a piece of cake. I, on the other hand, loved the bars. If you are on the low Fodmap diet, do not use the cashew butter alternative. It is high Fodmap. Coconut Chocolate Whoopie Pies – grain, dairy, nut and refined sugar-free
I've made only four recipes this weekend for the cookbook and here is one of them. These are super decadent whoopie pies which have all the taste and flavour of the sugar and grain-laden ones. The book has over 40 recipes now so I only need a few more before it is complete. Meanwhile I just wanted to talk to you about something interesting that I found out the hard way. A few months back we had some testing done in our house to test the levels of toxic gases, moisture and unhealthy living conditions. This was not something we commissioned. In fact, someone who was doing a thesis at university approached us about using our house as part of the test for their studies. Most of our house was just fine but one thing came out of the study.
