I am back on board again after such a great holiday with family and visiting family in Italy. But all good things come to an end and far too quickly. Not that my every day life is to be sniffed at. I have an enjoyable job with good bosses, a wonderful husband and son and I get to blog in my spare time about food. What can beat that? Last night, I felt a need for healthy and nutritious, so salmon (all that omega 3 stuff) and spinach (made Popeye strong) were employed along with some great crispy potatoes. There's probably a little too much oil to be on a slimmer's menu but it tasted great and the scales didn't complain afterwards. Caramel Granola Bars – Gluten-free
You would think by now I had run out of new granola bar recipes and it could definitely happen. There are only so many dried nuts and fruit out there and the binders must be limited too but so far I have never repeated one. Adriano and Dario now expect to have the tins (Tupperware container, actually) full so they can stick their hungry hands in there whenever they want and find something to appease their appetites. Last week I made those granola bars filled with caramel and topped with chocolate. That was a mistake – they were all gobbled up by Wednesday because they were too delicious. I was brought up on a farm where visitors were offered a cup of tea when they dropped by. But never just a cup of tea. Almond & Apricot Granola Bars – a bit of everything
Today is the day I make the granola Bars for our morning tea snacks during the week. Over the last few weeks, I have made various different ones and had several leftover ingredients so I decided to create my own mixture. Therefore there really is no exact recipe for these but I can tell you the combination of ingredients and I can also tell you that these are the best yet. I hope I can reproduce them in the future. [print_this] Cashew & Apricot Granola Bars Ingredients: Almonds - chopped Dried apricots - chopped Raisins Dried cranberries Glace cherries Sunflower seeds Ground almonds Dates - chopped Rolled oats Rice bubbles 1 tbsp cocoa Milk chocolate - chopped 1 tsp vanilla 2 tbsp apple sauce Crushed pineapple - not too much juice 1 mashed banana A few tbsp caramel sauce Method: Mix all the dried ingredients.
