If you often have guests over to eat but you don't always have a lot of time to prepare something delicious, then this recipe is for you. My inspiration came from one of Jamie Oliver's recipes in his 15 Minute Meals cookbook. I have, of course, made it low Fodmap and gluten-free. As always with Jamie's "quick" meals, it took longer than he says but it was still doable in under half an hour and was quite delicious. I am sure your guests would not complain. Jamie served the meal with fried okra so I went hunting for it and found it. This is the first time I have tried it and it was pleasant but without a lot of taste. By the way, we can only have 4 pods. Perhaps fried zucchini would be an alternative if you can't find any okra. Mini Chicken Lasagnas with Wonton Wrappers
You will have seen the photo story of lasagna making I photographed in Italy and now I have made my own quick version. There is no comparison but we working mothers and wives have to find shortcuts or we would have to wag work in order to make the original versions of these time-honoured recipes. It was such a pleasure to watch the making of the pasta sheets from scratch but I used wonton wrappers. It was the first time I had used them and I was pleasantly surprised at how easy they are to handle. They separate easily and don't rip. I will be using them again for all sorts of things. I decided to make this a chicken lasagna to shake it up a little and also to not seem to be imitating the lasagna that Laura made in Italy. Chicken Wraps with Coriander, Chilli & Ginger Sauce
I love wraps of all kinds. Both because they taste good and because it seems like an easy, quick meal. Mind you it depends on what you put in them. A simple filling is a bought sauce, tomatoes, lettuce and sliced meat. A more complex one is like these ones I prepared tonight. I made the sauce and breaded and cooked the chicken. It was an invented combination and it worked well despite the slight crossover of cuisines. Wraps are open ground for a fertile imagination and you can stretch your cooking muscles as far as you want. I'm sure you all have your favourite fillings too. This not a low Fodmap recipe. Do you understand your oven? I learned something today.
Cravings of a Lunatic mentioned an article by Dorie Greenspan in the comments for my Chocolate Cranberry Cookies about heating your oven and it could explain some of my baking problems. Apparently, you have to wait for some time after the oven has reached the desired temperature because it is not in fact at the desired temperature. Just to be sure, the oven goes way beyond it and then settles back for a snooze while it cools to below the desired temperature and then kicks into action again. Its aim is to average out at what we have told it to do but with as little effort as possible. Not helpful, I say. And that’s why recipes always have cooking time ranges – because every oven is different. So we can get men to the moon (I know that’s a cliché) but we can’t create a reliable oven that sits at a particular temperature long enough to cook ten-minute cookies. Chicken, Broccoli & Cheese Crepes
Over the weekend I found an old recipe book I created while living in Italy. It is full of hand-written recipes I collected over there. Many have pictures cut out of magazines, stuck in with tape which has aged and lost most of its effectiveness. It was a trip down memory lane. I decided to make one of the old recipes tonight. It was a bit of work because of the different elements but it wasn't difficult. I made a little too much so I guess we will have leftovers tomorrow night - a rare occurrence.
