Spicy Tofu Burritos – Low Fodmap
I still have a whole bunch of the spice mixtures I got from Casa de Sante so I wanted to create a dish that would use the Mexican Seasoning mixture. Tofu Burritos is what came to me and that's what I created. I mainly used what we had in the fridge and this is what I came up with. 3.0 from 2 reviews Tofu Tacos - low Fodmap Print Author: Suzanne Perazzini Ingredients Low Fodmap tortillas Firm tofu Casa de Sante Mexican spice seasoning Tomatoes, chopped up Corn Grated mature cheese Yogurt Coriander/cilantro Spring onion – green part only Salt and pepper Method Chop the tofu into small squares and toss in the spice mix. Heat a little light olive oil and cook the tofu until brown. Blend the coriander, yogurt and spring onions in a food processor. Season to taste. Heat the tortillas. Grieving for Your Lost Self after an IBS Diagnosis
Those of us who have had IBS forever know no different and though we have pangs of self-pity about “why us?”, we get on with the only life we have ever known. However, if you get the diagnosis later in life, it can come as a shock that rocks your world – and not in a good way. The need to go through the grieving process for the good health you once had is a real thing and should be observed. Acceptance does not come easy and is far down the track for the moment. The 5 stages of grief and loss are: 1. Denial and isolation 2. Anger 3. Bargaining 4. Depression 5. Acceptance. This was first proposed by Elisabeth Kübler-Ross in her 1969 book On Death and Dying. Tofu Tacos – low Fodmap
As tasteless as tofu is, it can become delicious with the addition of some well-chosen spices. I have added a Mexican mixture from Casa De Sante which raised this several levels to mouthwatering. With the addition of a small green salad, dinner was made. This is a great vegetarian meal. Tofu Tacos - low Fodmap Print Author: Suzanne Perazzini Ingredients Corn taco shells A block of tofu, chopped into cubes Casa de Sante Mexican spice seasoning Tomatoes, chopped up Salad leaves Grated mature cheese Method Heat a little oil and fry the tofu cubes until browned. Sprinkle over a few teaspoons of spice and stir well before cooking for a few more minutes. Heat the taco shells as usual. Pile the tofu into the shells and top with tomato and grated cheese. Busyness Worn as a Badge of Honour
A year or so ago, I read a blog post by Hands Free Mama called Vow to Breathe. It is a lovely story of the realization of what she was doing to herself and her children with all her busyness. In the past, I was guilty of the whole “I am so busy” comment and yet felt decidedly uneasy about uttering it. When other people said it to me, it grated on my nerves. Now I no longer work in the corporate world but run my own business, it never occurs to me to use the “busy” word anymore. The work I am doing gives me great satisfaction, so it doesn’t feel like the “busy” work of before. “BUSY” IS SYNONYMOUS WITH “SPINNING ON THE SPOT” I have decided that “busy” is synonymous with “spinning on the spot” and never getting anywhere.
