Today, I thought I would photograph everything I ate and show you in picture form what a low Fodmap day looks like. You will see that I eat less that the permitted amounts of each food but that's because I eat what keeps my weight stable. You may need more than me, but this will show you safe combinations. The photos are not masterpieces - I snapped them quickly before I ate. Because I have been doing this for so long, I don't have to check the clock since my stomach tells me when it's time to eat. Tuna, Tomato and Rice Stir Fry – Low Fodmap
In our household we often have leftover rice because I find it difficult to calculate it correctly. I always eat a small amount but my husband is the wild card and will sometimes eat for four but sometimes only for two so I often make too much. Since we mustn't keep cooked rice for too long because bacteria grows on it really quickly, the next day I use it in invented dishes and that is how this one came about. It is one of the quickest I have made in a while because the protein meat was canned tuna. With the herbs and spices I used, it was delicious and no one would have guessed it took me around 10 minutes for the entire preparation and cooking process. Next time you have some leftover rice, give this a go. It is low Fodmap and gluten-free and will keep your gut calm. Birthday Party for an Octogenarian
We celebrated my mother's 87th birthday on Sunday at a beautiful restaurant with cake/dessert afterwards at her home. I thought I would share a couple of photos of the day. I chose eggs Benedict for my lunch meal because it was low Fodmap except for the buns underneath but I can tolerate a certain amount of wheat so it was fine. My niece, Dana, made the lemon meringue pie as the birthday cake and it was delicious. Again it was low Fodmap except for the pastry. Naturally we can only have a small amount because of the sugar content but my tummy was calm afterwards so I gauged it well. As you can see there is no need to miss out on the pleasure of food if you choose wisely.
