Have just one of these juicy meat burgers to stay within safe FODMAP limits. You can add a few more salad leaves on the side, if you like and a side dish of potato chips. If you have reflux, skip the tomato and replace it with extra sprouts. And it’s best not to salt the ground meat until the patties are cooked: they’ll leak out liquid and you’ll get a broiled burger instead of a grilled one. This recipe comes from my book, The Low-FODMAP 6-Week Plan and Cookbook, which you can purchase HERE on Amazon or in most other online outlets and all good book stores. Low Fodmap Lamb & Vegetable Soup
I usually do the inventing of the low Fodmap recipes and then post them here for you to re-create. But, today I am telling you about a meal I had the other night that took only a few minutes to prepare. Fodmap Friendly sent me some samples of low Fodmap food to try from Fodmapped and this lamb and vegetable soup was among them. It is low FODMAP, gluten Free, with no garlic or onion, no added MSG, no artificial colours, flavours or preservatives - exactly how we have to eat with IBS. The ingredients are: water, pumpkin (19%), lamb (12%), carrot (11%), celery (5%), brown rice, corn starch, glucose, salt, canola oil, yeast extracts, natural beef extracts, herbs, pepper and spices. I am delighted to say that it was delicious and very wholesome. In fact, I made some cheese on toast to go with it because I wasn't sure it would be enough for us, but it really was a meal on its own. You can read more about it HERE. For their products go to the Fodmapped website and see if they can be … [Read more...] about Low Fodmap Lamb & Vegetable Soup
Tasty Low FODMAP Cottage Pie
Since being diagnosed with Irritable Bowel Syndrome (IBS) in 2013, I have been following a modified low FODMAP diet. This means that even after four years, I still have to eat 80% low FODMAP food in order to stay below my safe threshold and avoid those awful symptoms. Thankfully, cooking low FODMAP food is not an effort anymore - I know what I can tolerate and what food I should avoid. I am the only member of my family suffering from IBS, but for convenience I tend to prepare mostly low FODMAP food for everybody at dinner time and generally nobody complains about the fact that they are missing high FODMAP ingredients in the recipes. One of my most popular dinners is a low FODMAP Cottage Pie. With some easy modifications, I transform this classic British dish into one that is also low Fodmap for me. Originally (pre-IBS), I used to prepare this recipe with garlic, onion, celery, carrots, peas and sweetcorn; now I use garlic and onion infused oils, carrots, a smaller quantity of … [Read more...] about Tasty Low FODMAP Cottage Pie

Meanwhile, our son, Dario has returned home from travelling around Europe on a motorbike and after a few months here has moved out and set himself up in his own place. The raising years happen all too fast, but life is a series of stages and we are onto the next one, without the third member of the family. We also have two completely empty rooms since he took all his bedroom and study furniture with him to give him a good start. Dinner tonight was simple. I had left over ragu sauce that Adriano cooked for last night, and I served it with polenta. But not just any old polenta. This one is a recipe in itself - simple but so tasty. I added some grilled zucchini and a balanced low … [Read more...] about Savoury Polenta – Low Fodmap and Gluten-free
Curry Meatloaf – Low Fodmap & Gluten-Free
When thoughts turn to dinner, I either ask my husband what he wants or I consult my taste buds. They never lie. Decision made, I walk down to the shops and purchase what I need. Then I loop down to the beach and walk along the sand and back home. The other day, even though it is the middle of summer and we have hit some seriously hot weather, for some reason my taste buds told me meatloaf. They also told me curry so smarty pants here combined the two and came up with this recipe - curry meatloaf. If you have reflux as well as IBS, do go easy on the spices. 5.0 from 1 reviews Curry Meatloaf - Low Fodmap & Gluten-Free Print Author: Suzanne Perazzini Serves: 4 Ingredients 500gms minced beef 1 tsp turmeric 1 tsp cumin powder 1 tsp cumin seeds 1 tsp coriander Cooking oil ½ a leek - green part only, chopped finely, ½ a red bell pepper, chopped finely 1 stalk celery 1 egg Salt & pepper Method Heat oven to 180°C/350°F.
