We all love Indian food in this family and kebabs from any country are a favourite. These seekh kebabs are from India and I found the recipe at Manus Menu. She also has the recipe for a decent Hari Chutney, which is the perfect accompaniment for these kebabs. I served them with naan bread because I love it but they could work just as well with rice or some other grain. This recipe is not low Fodmap. Beef, Feta and Roasted Pepper Open Sandwiches
I love the kinds of foods you get at cocktail parties - finger foods. Those little bite-sized pieces you can pop in your mouth without getting all messed up. Well I've taken a classic one and enlarged it to dinner sized. Toast a crusty piece of bread, top it with feta, roasted peppers and thin slices of sirloin steak. Add a little horseradish and pesto sauce and a man-sized finger food has been created. Beef, Feta and Roasted Pepper Open Sandwiches Print Author: Suzanne Perazzini Ingredients A thick slab of sirloin steak Feta cheese 2 red peppers Parsley Garlic infused oil Olive oil Pepper & salt Gluten-free bread - sliced Horseradish sauce Pesto (optional) Method Grill the steak until medium rare and let rest for 5 minutes. Cut into slices. Char the peppers under the grill until the skin is black. Remove the skins. Slice up the peppers and mix with one tablespoon of garlic-infused oil, one tablespoon of olive oil and chopped up parsley. Season the mixture. Beef, Spinach and Feta Pie
The dinner last night was not so photogenic so I decided to make a pie. They usually look pretty good if it doesn't all go horribly wrong. Thank goodness this one didn't. I got the recipe from Spicie Foodie but I used puff pastry instead of philo pastry because I always find it too dry and brittle. Maybe I should buy better quality. Adriano and Dario devoured every last crumb of the pie and it wasn't that small. The layers of meat, spinach and feta worked really well to create a tasty and filling meal. This recipe is not low Fodmap. Beef, Spinach and Feta Pie Print Author: Suzanne Perazzini Ingredients 3 sheets of puff pastry 500 g mincemeat 1 small onion, finely chopped 4 garlic cloves, minced 2 small chillies, finely chopped 1 tsp dried thyme ½ tsp dried rosemary 1 tsp salt ¼ tsp ground black pepper 1 pack (350 g) frozen spinach Feta cheese Olive oil or vegetable oil 1 egg lightly beaten, for egg wash Method Preheat oven to 220 c degrees. … [Read more...] about Beef, Spinach and Feta Pie
Chilli Sauce Hamburgers
Salad last night so hamburgers tonight - got to balance life out a little. Not that these could be categorized as unhealthy. I even made my own beef patties so I know what is in them. I did stack them a little high with goodies and it was a struggle to get my mouth around the whole burger, but it was worth it for the great flavour. This recipe is not low Fodmap. Chilli Sauce Hamburgers Print Author: Suzanne Perazzini Ingredients 500g mince meat Cumin seeds Salt & pepper Edam cheese, sliced Avocado sliced Tomatoes sliced Alfalfa Sprouts Onions sliced Lettuce Burger buns Hummus Chilli sauce Plain yoghurt Method Mix the mince with cumin seeds, salt & pepper, form into patties and fry in a little oil. Pasta with Creamy Tomato Mince Sauce – 15 minutes from go to whoa
I found this recipe on Framed Cooks. It looked so simple but I was worried about cooking it for my Italian husband because cream and tomato don't really equate to a typical pasta sauce. But I took a deep breath and dove in. It takes no longer than the time it takes to heat the water and cook the pasta. This recipe is not low Fodmap. Pasta with Creamy Tomato Mince Sauce Print Author: Suzanne Perazzini Ingredients Olive oil 500g/17.6oz mince meat 1 Onion - chopped up A can of chopped tomatoes (420gms/14.8oz) 1 cup of cream 2 tbsp tomato paste Salt and pepper Parmesan Pasta - penne Method Cook the pasta as normal. Lasagna Al Forno with Spinach – the fastest lasagna I know
Lasagna is quintessentially Italian but I don't make it very often because it takes too long and, even though my family eat late by New Zealand standards, we do like to eat before 9pm. I do think I cook slowly no matter how much I try to speed up but I started this a little early tonight at 7pm and we ate just after 8pm including cooking time so that was pretty fast for lasagna. I found this recipe in the latest Verve magazine and they noted it was courtesy of Victoria Ave Meats. Here we go: This recipe is not low Fodmap.
