The air is certainly a little chillier than a week ago and our winter clothes are reappearing after a brief sojourn in the back cupboard - all too brief this year. But we can always lift our spirits with the right food for our mood. And tonight we had a wonderful soup of a tomato base with fusilli pasta and the best sausages I could find. I have a young butcher right opposite where I work in Remuera and he makes all his own sausages in house. I chose those made with Savannah Angus beef and they were perfect for this dish. You will notice that I often don't give exact quantities of the ingredients because I imagine you can all cook and can make your own decisions about how much of each ingredient you want. This is not like baking where quantities are important for the success of your dish. Couscous with Sausages and Peppers
Another simple recipe for those work nights when you get home at 6.30pm then need to exercise before cooking. This recipe is not low Fodmap. Couscous with Sausages and Peppers Heat together: 1/4 cup of vinegar 1 + 3/4 cup of water 1 tsp of honey 1 tbsp of mustard Turn off heat once it reaches the boil and add two cups of couscous. Put the lid on and let it soak for 3 minutes. Meanwhile chop up three red, yellow or green peppers into small squares. Cut 200g feta into squares. Cook six of your favourite sausages and slice them up. Fluff up the couscous with a fork and mix all ingredients together. Hamburgers with a twist
Every now and then Adriano asks for hamburgers to fill him up, especially after a couple of hard mountain bike races in a row. I make what could be considered a healthy version. Hamburgers with a twist Print Author: Suzanne Perazzini Ingredients Mince rolled and flattened into patties Sliced avocado Sliced tomatoes Salad leaves Chilli sauce mixed with yoghurt Hummus Hamburger buns Method I toast the bottom of the buns and spread hummus on them while the patties are cooking in a pan. I then add the avocado and tomatoes. When the meat is ready, I toast the top of the buns and assemble the rest of the hamburgers. Thai Beef Salad
Cooking Recipe: We all have a version of a Thai beef salad and I made one of mine tonight. It is so simple. Here are a few of the ingredients - I do like to assemble things before I start. The first thing is to put a couple of sirloin steaks on the grill and cook until still pink inside but not bloody or it will taint the salad. While they are cooking, chop up chives, red chillies and coriander. Then throw a mixture of salad leaves in a bowl and add chopped up tomatoes. Next step is to mix the dressing: 1 tbsp soy sauce 1 tbsp fish sauce 2 tbsp lemon or lime juice 1 tbsp sugar 1 tsp garlic-infused oil Once the meat is cooked, slice it up into bite-sized pieces and throw into the dressing and mix.
