It's New Year's Eve and the young ones are off out doing what all young people should do and that is celebrate the coming in of the New Year. I guess Adriano and I have seen too many of them because this year for the first time we are staying at home. But we did pop a bottle of expensive French champagne and I made nibbles to go with it. I am getting used to cooking for Adriano and Dario and then separating out the grain for me but these I made grain-free so I didn't have to worry. When I was slurring my words ever so slightly, I cooked dinner with every intention of photographing it, but then I couldn't be bothered and we ate it and now it's too late so all you get tonight are the appetizers. Salmon & Feta Pizza with Cauliflower Base – gluten-free and why I am taking this path
I am trying grain-free at the moment - paleo diet style. You might ask why I am doing first sugar-free and now grain-free. Well, I am trying various different options in an attempt to eliminate certain issues I have been having for years. Probably since I was born actually. When you know no different, it takes a while to click that perhaps this is not the way it should be. I won't go into unnecessary details but I will tell you that it got a lot worse six years when my father died and I took on a very stressful job. Until then, I had coped but now it was painful and limiting. I tried seeing doctors but that can be a useless path to take if you don't have a broken bone which is easy to diagnose so I eventually gave up on that. Three dinners in small servings – Shepherd’s pie, Chicken Sliders and Thai Crab & Shrimp Pies
Here are three dinners we have had over the last week. As you can see, I am still doing the small servings thing so I stop eating once my portion is finished. I made four of the shepherds pies so Adriano could eat two. I made three seafood pies because I decided not to eat any carbs and ate only the filling you can see in the small pot in the photo. But as far as the sliders are concerned, I made six and I ate one while Adriano ate the other five (Dario was at his girlfriend's). I still find this grossly unfair. Smoked Salmon Tartlets
On Sunday night, we had dinner with some dear friends we hadn't seen in a while and it was a fantastic catch up at their new, old home. They love villas with heaps of character and make gorgeous homes wherever they live. I thought this was a great opportunity to make some appetizers that others could taste besides us and I came up with these smoked salmon tartlettes to take with us. I had hoped to find some pastry shells in the supermarket to save time but they only had sweet ones so I bought pastry sheets instead. I know - I should have made the pastry myself and if you want to, I have a good recipe I use here. The filling was delicious and you could mix it up as much as you want. Roasted Salmon and Crispy Potatoes
I am back on board again after such a great holiday with family and visiting family in Italy. But all good things come to an end and far too quickly. Not that my every day life is to be sniffed at. I have an enjoyable job with good bosses, a wonderful husband and son and I get to blog in my spare time about food. What can beat that? Last night, I felt a need for healthy and nutritious, so salmon (all that omega 3 stuff) and spinach (made Popeye strong) were employed along with some great crispy potatoes. There's probably a little too much oil to be on a slimmer's menu but it tasted great and the scales didn't complain afterwards. I'm sticking with the little food. They are a bit more work but it means I eat less and that's always good. Our holiday back to Italy to see family is only a few weeks away and I don't want to look balloon-like. I'm getting older but I don't need to get fatter. So little food it is. I made this recipe up and some purists might say that you can't combine the Thai flavours of chili and ginger with French Brie but I did and they tasted great. The evidence is the lack of a crumb left. I also had left over a bit of the tart filling from last night so I filled a few pastry cases with that, hence the two fillings in the photo.
