If you can find some gluten-free pita breads, you can basically stuff them with anything you like. Last night I had left over ragu sauce that Adriano had made in the weekend and rather than have pasta again, I made these stuffed pita breads with the sauce, a coleslaw I made up, tomato and cheese. They were great and I even have one leftover for lunch today, which I am looking forward to. If you have no problems with sorbitol, you could add some mashed up avocado with lactose-free yogurt or sour cream like I did. I didn't add that until after taking them out of the oven so it didn't get cooked. I enjoy many different cuisines and Mexican is among my favourites. If you eat low Fodmap, you do have to watch out for some of their ingredients like legumes and too much dairy but it is still possible to get the richness of the Mexican food while staying true to the low Fodmap diet. It's not hard to find gluten-free tortillas which are suitable for us these days, and cottage cheese and mature cheese are on the permitted lists as long as we don't overindulge. This is an easy, delicious dish which wouldn't go amiss even for guests and it seriously took me about ten minutes to put together. Oh, and it's vegetarian. Spicy Cajun Chicken – Low Fodmap and Gluten-Free
If you often have guests over to eat but you don't always have a lot of time to prepare something delicious, then this recipe is for you. My inspiration came from one of Jamie Oliver's recipes in his 15 Minute Meals cookbook. I have, of course, made it low Fodmap and gluten-free. As always with Jamie's "quick" meals, it took longer than he says but it was still doable in under half an hour and was quite delicious. I am sure your guests would not complain. Jamie served the meal with fried okra so I went hunting for it and found it. This is the first time I have tried it and it was pleasant but without a lot of taste. By the way, we can only have 4 pods. Perhaps fried zucchini would be an alternative if you can't find any okra. A Simple Way of Life On our way to my uncle’s fishing lodge and game farm on the Zambezi River in Zambia, we passed through a village in the middle of nowhere. It was dusty with people wandering about among the very strange (by our standards) shops and market stalls. (Sorry about the quality of the photos. I had to photograph photos since they were not digital.) Broken Windows We stopped to buy some produce, had several conversations with various villagers and then were on our way over bumpy, at times almost impassable roads on our trip to the lodge. Among the many stories my uncle was to tell us during that visit, he mentioned the village school which the government had decided to bless with glass in its previously open windows. Within a week, all the windows were broken. This is a good example of a government’s misguided efforts to help its people but also of the value of deciding yourself what you need and then applying some effort for the acquisition of it. If you love Mexican food but have to eat low Fodmap, all is not lost. The main part that is an issue is usually the sauce which contains onion and garlic. So, we have to make everything from scratch and can't rely on bought processed foods. But it really isn't hard. Check out this layered pie with a polenta base and chicken topping.
