Here's a simple dinner which will please all the family from those eating grain to those who aren't. I kind of missed pizza but now I don't any more. You see it wasn't the base I missed; I missed all those yummy toppings and I can certainly still have those. Obviously the toppings can vary according to what you have in the fridge or what you fancy when doing the shopping. Lemon Meringue Tart Recipe – grain, nut & refined sugar-free
I have been wanting to create a lemon meringue pie for some time because I love them but had to work out how to do each of the components without grains or refined sugar. I already had the crust down pat because I am happy with the one from the grain and refined sugar-free e-book Indulge which I have used before on the blog. The other two parts, the lemon curd and the meringue took a bit more to sort, but sort them I have. These tarts take a little while to make but I have plenty of lemon curd left over for something else. I have been thinking it is probably time to let you have a progress report on this new food journey of mine. Carrot, Coconut Muffins with chocolate topping – grain, nut and refined sugar-free
I have made some amazing carrot cake cupcakes in the past so I wanted to make something similar but grain and refined sugar-free and this is the result. These are good and the chocolate topping makes them amazing too. This topping could also be used as a chocolate mousse as is or you could even fold through some whipped cream if you are not dairy-free. But this time I used it as a frosting. Make sure you blend this really well so there are not lumps of avocado or you will taste it. Otherwise the chocolate is the overwhelming flavour. Beef Chimichurri, New Potatoes & Crunch Salad – Jamie’s 15 Minute Meals
I had to do it - I went out and bought Jamie's 15-Minute Meals. I made one of his meals last night and it took me 40 minutes and one part didn't work out too well so I didn't photograph it. Tonight I tried again with a different recipe and this was a stunning success. Okay, it took 30 minutes instead of 15 but that's not really too long to have all that food on the table. He says to put it all on a tray and the only thing big enough was an oven tray but it worked. Less dishes to wash too. And my Cuisinart DLC-2ABC Mini-Prep Plus Food Processor, Brushed Chrome, as always with his meals, was essential. I just checked on Amazon and these processors are heavily discounted at the moment so, if you need one, this is your chnace to get one cheaply. Salmon Eggs Benedict
I enjoy my job but I am stuck in an office all day and can’t see the sky. Straight out the window at the far end of the office, I see shops on the other side of a very busy road. At my last job, in order to get some exercise, I used to walk every day for an hour around the boats in the nearby marina, breathing in the fresh sea air. That job was stressful beyond words and I used to take that walk in rain, sun or snow (actually it doesn’t snow here but that sounded good) to get away from the place. Then I injured my knee and was told that walking was now my enemy (doctor’s words) but to use an exercycle five days a week for 30 minutes, which I did at home after work. The exercycle is inside, in a dark room where I need to turn on the light. So during the day, I used to go and sit by the marina for an hour to get my vitamin D and stare at the boats and dream of sailing off to far lands.
