A few months ago, I was approached to write an article about the low Fodmap diet for the Free-From Heaven magazine. Well, the issue has just been published and is out in shops for sale now. I am excited that they used my copy basically word for word and didn't change anything, which means all the information is accurate. That's the cover on the left in the image and the first page of my article on the right. They have even included a couple of my recipes in their entirety. They have made a lovely job of the layout too so I am a happy chappy. Meatloaf Roulade I got the idea for this from www.thehealthyfoodie.com but used quite different ingredients to make it low Fodmap. The Video There is a lot of confusion around dairy on the low Fodmap diet and many think it needs to be completely cut out. I clarify this in my video. The Transcript Welcome. Every now and then I get someone criticize a recipe of mine because it has dairy in it. So I thought that today I would clear up once and for all this confusion so many people have where dairy on the low Fodmap diet is concerned. The low Fodmap diet is complicated – I know that well. But it is miraculous if you do it right and that’s not easy. Milk contains two substances which could potentially cause problems. The protein – casein or lactose – the sugar or carbohydrate which is the D in Fodmap – disaccharide. Those on the low Fodmap diet are concerned with the carbohydrates in food but just be aware that you could have an issue with the casein as well. How Long on the Elimination Stage plus Fennel, Walnut & Brie Tart
The Video I am often asked how long you should stay on the elimination stage of the Low Fodmap diet for irritable bowel syndrome. Many sites say 6-8 weeks but in most cases that is too long. It depends on how soon your symptoms disappear. Watch my video for more information. The Recipe I got creative tonight, and this tart is the result. I was pretty hot by the time it was cooked with a couple of new burns but the result was worth the effort. I used to eat a lot of fennel in Italy, both cooked and raw, and decided to use that as the vegetable for the tart. Then I added the brie because every tart needs cheese and walnuts for the crunch and the toasty flavour. I had fresh oregano growing by the window so threw in a small quantity of that - don't use too much or it will overpower the fennel flavour.
