A Complex Diet I am super pleased to hear that more and more often healthcare practitioners are mentioning the low Fodmap diet to their patients with IBS but, almost right across the board, they don’t really know much about it and tell the patient to Google it for a list of allowed foods. So, the confused soul Googles the diet, picks up some probably obsolete list of allowed and banned foods to try it themselves. And they fail. They fail because the list is very likely to be inaccurate and also because this diet needs to come with a set of instructions and you won’t find that by Googling it. It is a complex diet and you need to understand how it all works to implement it safely and in such a way that you have positive results. All fruit and vegetables contain Fodmaps. Those on the allowed list contain a lower level of Fodmaps – that’s the only difference. So you think you can have a big salad of allowed vegetables – 1 carrot, ½ cup of zucchini, ¼ stick of celery, 2 radishes, 1 … [Read more...] about Fish Pie – Low Fodmap & Gluten-Free
Spinach Quinoa Quiches – Low Fodmap & Gluten-Free
Webinar Went Well I gave my webinar on the low Fodmap diet a few days ago and it went great. I mean really great. I didn't freak out and hide under the desk or stuff up too much of the technology side of things. The audience were numerous and participated wonderfully, answering questions in the chat field when I asked them and then, at the end, they asked me lots of questions for 20-25 minutes. But I do have to confess I did make a mess of the recording. For some reason, the recording on the site which hosted the webinar didn't record it despite my pushing the right button. I did also use my own screen capture software, Camtasia, but managed to leave the webinar controls over the screen that was being recorded with my slide show on it. After a mini breakdown and a bit of frothing at the mouth with anguish, I realized I could turn the slides into jpegs and lay them over the ruined slides one by one. It took a while but I now have a sensible recording. I won't make that mistake the next … [Read more...] about Spinach Quinoa Quiches – Low Fodmap & Gluten-Free
Polenta Pizza – Low Fodmap & Gluten-Free
Tomorrow is D-day. The day of my first ever webinar. This has been a steep learning curve and I just hope I don't mess up with the technology and no one hears anything. I am not worried about the webinar itself because I am passionate about my subject and really want people to learn about this eating regime which can take away so much misery. I have a Q&A afterwards and I hope people ask great questions. I get daily emails with questions and I do answer them all but this is a great chance for people to ask me everything all at once. If you would like to register, there's still time because the webinar is on Thursday 19th June at 8pm EST/7pm CST/5pm PST/Friday 12pm NZ. You can register HERE. The Recipe I needed to cook a quick and tasty meal so I could focus on the webinar and I came up with these polenta pizzas. Making the polenta literally takes a few minutes. You pop some tomato slices and cheese on top and stick them in the oven. Meanwhile you cook the bacon and it's all done … [Read more...] about Polenta Pizza – Low Fodmap & Gluten-Free
Cheese Puffs – gluten-free and low Fodmap
Webinar Reminder This is a wee reminder about my very first webinar on the low Fodmap diet. Anyone with digestive issues really should be there to hear about how to implement the diet and how to integrate it into your life. If you suffer and no one can help, this is your chance to listen to someone who has had her life turned around by the discovery of this diet - that's me, by the way. It is a magical diet which can change lives and I want to share my experience with as many of you as possible so you can have the same transformation in your life. The webinar will be held on Thursday 19th June at 8pm EST/7pm CST/5pm PST/Friday 12pm NZ. To register, click HERE. The Recipe I just baked these and I am going to call them cheese puffs because of the way they blew up like mini balloons. I found the recipe on Kate's blog, Real Food RN. Pop on over to her blog and have a look at what she created. She called them cheese biscuits and that's exactly what they look like. And she has progress … [Read more...] about Cheese Puffs – gluten-free and low Fodmap
Potato & Spinach Soup – low Fodmap & gluten-free
Webinar I have so many people asking me questions about the low Fodmap diet that I have decided to do a free webinar on the diet. If you would like to attend, please register HERE. The webinar will be held on Thursday 19th June at 8pm EST/5pm PST/12pm NZ. The Recipe A couple of my clients from the Southern Hemisphere who are doing the low Fodmap coaching program with me at the moment have asked for some warming dishes and I have created this low Fodmap soup for them. Since we can't eat onions or garlic which are often at the base of soups, I used a mix of celery (we can eat 1/4 stalk each), fresh ginger and fresh red chilli, chopped finely and fried together with the cumin powder to make a flavoursome blend for the soup. I then added potatoes, spinach and beans (we can eat 10 beans each). I like to blend around about half the soup mixture to form a thick soup and then add it back into the saucepan with the rest so that there are a mixture of textures to munch on. This potato and … [Read more...] about Potato & Spinach Soup – low Fodmap & gluten-free
Garlic & Onions on a Low Fodmap Diet and Banana Oat Truffles
Onion and Garlic - My Enemies When people hear that I can’t eat onions and garlic, they are horrified. They can’t imagine food without what they consider to be the base of so many recipes. I guess I thought like that too before I discovered that onion and garlic were my very worst food enemies and had caused me decades of pain. I can now assure you that life goes on without either of those two food items. And it goes on pain-free. I would never wittingly consume either ever again now I know what life can be like without them and their close cousins – other high Fodmap foods. When I prepare a meal that would normally have a base of fried onion and garlic, I use different vegetables to create a similar but innocuous base. I would use any mix of the following: Fennel We can eat ½ a cup at any one time so if you are serving four people, add 1 cup and you can be sure you are safe unless you eat more than your share. Above ½ a cup and you get an overdose of fructans. Leeks – just the … [Read more...] about Garlic & Onions on a Low Fodmap Diet and Banana Oat Truffles
