I have been going back through some of my old folders of collected recipes and came across this mousse recipe which needed only a few adjustments to make it gluten-free. The recipe had the layers one on top of the other but I made them separately for some reason. I have given the instructions for making a layered mousse however. Note that the salmon mousse is also low Fodmap and the avocado one would be suitable for those with IBS who can tolerate sorbitol. The weather in New Zealand is just beautiful at the moment and it is such a pleasure to be alive on such days even though I spend most of my time inside working. But I can see it out my window and I make sure I get my daily walk along the beach. I have been working hard on my next cookbook and it is almost ready. I am planning on doing a video for it, which is a first and a bit scary. I have all sorts of ideas for the video but whether it will turn out like my plans is yet to be seen. The cookbook is called "Low FODMAP Menus … [Read more...] about Gluten-free Recipe for Avocado & Salmon Mousses
Low FODMAP & Gluten-free Recipe – Blueberry & Raspberry Mini Loaves
These mini loaves are actually quite big but Adriano eats two at a sitting. I struggle through one and often chop them in half. Talk about envious! There is no way I can eat what I want. To stay the same weight, I have to watch every single thing that goes in my mouth. I am finished at the table in 5-10 minutes. Adriano is eating for half an hour. Maybe I should take up mountain biking. But then again, maybe not. He often comes back with scrapes and wounds that surpass those of rugby players and boxers. I am tired of the sheets being covered in drying blood. But wrapping one's wounds is not manly and they have to breathe. But all over the sheets? My life today is at 180° from where it was only a month ago. The only headaches I get now are when I have spent more than 12 hours at the computer with only a few breaks, and that's so my fault. Otherwise, life is good. I walked along the beach today as I do everyday and I realised that I was happy and at peace. There has been so much … [Read more...] about Low FODMAP & Gluten-free Recipe – Blueberry & Raspberry Mini Loaves
Low FODMAP and Gluten-Free Recipe – Blueberry and Almond Tart – suitable for IBS
My days all blur one into the other now that I work from home. I forget when it is Saturday, which was always my baking day. But I have decided to stick to that routine at least, so I made yummy mini loaves for a guest post and this Blueberry & Almond tart for Adriano and me. Dario is away motorbiking around New Zealand with a good friend, which sometimes stops my breathing when I think of him out there on those roads with so little protection. But, he is having a great time and I was doing the same thing in Europe at his age, so I can't say much. Back to my baking efforts. I am trying to get this gluten-free recipe right for pastry and this was a little better but still a bit tough. I have put it down below so you can scrutinize it and decide for yourselves whether you want to give it a go. It certainly holds together brilliantly and tastes fine but is a little tough to cut. I think that must be due to the lack of an egg but some among you might know the science behind it better … [Read more...] about Low FODMAP and Gluten-Free Recipe – Blueberry and Almond Tart – suitable for IBS
Winter Soups – Community Cookbook $3.97
I have been keeping this under wraps. 52 real food bloggers, including myself, have collaborated to create a community e-cookbook of winter soups. These 52 soup recipes are varied and full of real wholesome foods to warm the cockles of your heart. These recipes are not diet specific but the majority are gluten-free, with many dairy-free, GAPS compliant and Paleo friendly. If you are on a low FODMAP diet, make the substitutions that I listed in my last post. The full price of the cookbook will be $9.97 but for 2 weeks only, the price is $3.97, which I think is a crazy small price for an e-cookbook of 52 recipes but that was the agreement made among us all. Have a look at a couple of the soup recipes. If you want to read more about the soups and see more photos, have a look at my Winter Soups book page. Or, if you are already convinced it's a fabulous buy, then click on the button below. … [Read more...] about Winter Soups – Community Cookbook $3.97
Low FODMAP Food Alternatives
It’s so annoying when you see a wonderful-looking recipe but there are several items on the ingredients list that you can’t touch for fear of a relapse to those bad old days of pain and discomfort. I am getting pretty adept at substituting food items and still getting a similar result. Let me show you some of my favourite alternatives. Gluten-Free & Low FODMAP Basil & Tomato Tart
Life is humming along quite nicely here in New Zealand with lovely weather and a carefree atmosphere. Even though I seem to be working more than usual but at home, I am also feeling light as a bird - a bird who has got rid of the heavy load of a soul-destroying job. Read an update here. The other day I made an old favourite of mine from when I was in my twenties. It's in a folder of recipes that all look ancient and yellowing with age. But some are just as good despite the passing of time. This is so simple, and great if you have people over for lunch. If you have little warning, you could even use a ready made pastry crust and shop-bought mayonnaise - not that I advocate those shortcuts at all. But sometimes needs must. Use the pastry recipe I have linked to in the actual recipe but just leave out the sugar. This is the best gluten-free recipe I have created and I use it all the time now.
