This follows directly on from my first article: “8 signs of FODMAP intolerance” found here. I thought I would explain a little more in depth why they are the symptoms of irritable bowel syndrome and low FODMAP malabsorption. For an explanation of the FODMAPs, see my Low FODMAPs page here. 1. Food equals bloating FODMAPs like fructose should be absorbed through the lining of the small intestine, but when an individual has difficulty doing this, the fructose continues on down to the large intestine where it is treated as a foreign substance which causes the bacteria there to go to town. This results in bloating, diarrhoea or constipation, as well as flatulence and stomach pain as a result of muscle spasms. Intolerance to any or all of the FODMAPs will result in the same symptoms. 2. Healthy food seems to aggravate the problem. For most people, including the ‘experts’, healthy food means fruit, vegetables, beans and whole grains (although the Paleo world would disagree with the last … [Read more...] about The 8 Symptoms of FODMAP malabsorption explained.
Banana and Blueberry Loaf – gluten-free & low FODMAP
Here we go with my banana and blueberry loaf. It is moist and stays that way for days. I wrap it in tin foil and place it in the fridge. It really is a very good gluten-free loaf. Blueberries and bananas are two of the fruits which are low in fructose and so okay for me to eat though always in moderation. No fruit is completely fructose free, of course. Fortunately I love blueberries and bananas. Mind you, if you have already had your fructose load for the day in other foods when you eat a piece of fruit, then you are going to suffer. That is, if you have fructose intolerance. The rest of you should also go easy on eating too much fruit because it's not good for anyone to overload on fructose. It is a sugar after all. Now I must go attend to my Facebook page and watch The Walking Dead, which is one of my favourite TV programs. I always do two things at once. Not that I am advocating that as a wise thing to do. Multitasking is overrated. 4.5 from 2 reviews Banana and Blueberry … [Read more...] about Banana and Blueberry Loaf – gluten-free & low FODMAP
Smoked Chicken Mini Quiches – Gluten-free & Low FODMAP
Another weekend is drawing to a close. I have spent much of today making a few changes to my blog by manipulating the code, which is quite hair-raising as I have actually killed my blog before by doing that. This time I made copies of each page before I touched them and it all worked, thank goodness. Yesterday, my baking day, I made a banana & blueberry loaf, grain-free bread rolls, kumara & cheese muffins and these smoked chicken mini quiches, which we gobbled up last night with a chilled glass of white wine. I will put up the other recipes later this week. I also still have the chocolate chip cookies from last weekend to show you. These mini quiches were a great nibble and Adriano managed to eat 8 of them all by himself. I made a different pastry from the usual one because I wanted to be able to roll it out thin and for it to be crispy as opposed to soft like in a tart. It was easy to work with and turned out exactly as I wanted it. The filling was delicious with the blend … [Read more...] about Smoked Chicken Mini Quiches – Gluten-free & Low FODMAP
8 Signs of FODMAP Intolerance
No. 1. Food equals bloating. After you eat, does your stomach blow up and become taut as if it contains a football? If you poke it, is there very little give, only resistance? Your clothes become tight around the waist within a few minutes of eating. And it hurts. No. 2. Healthy food seems to aggravate the problem. Many doctors have told you to eat more vegetables, fruit and whole grains so you can increase your fibre levels. But this makes you bloat worse than ever and gives you even more discomfort. No. 3. You are lactose intolerant but… The elimination of dairy hasn’t solved all your problems. You know it has been a good move but why do you still get bloated and need to use the toilet more often than you would like? No. 4. You can’t identify the culprit(s). Can you eat a particular food in the morning but the same food in the afternoon causes problems? Have you tried eliminating individual food groups without really improving things a lot? Are you totally confused about what … [Read more...] about 8 Signs of FODMAP Intolerance
Carrot Cake – Gluten-Free & Low FODMAP
Here is the carrot cake I promised you. It is as delicious as it looks and has lasted well just left out on the bench in an airtight container. I made it Sunday and it is now Wednesday. That's pretty good for gluten-free, which usually needs to be frozen to keep it fresh. If you tolerate some dried fruit, you could add some raisins but I liked it plain almost as much - I used to think raisins were essential. Through this food journey to find my digestive enemies, I have learned a lot and it is about time I started to pass on some of that knowledge in a more structured way, so I am going to aim for one post a week, which will be purely about irritable bowel syndrome, the low FODMAP eating regime and real food. Other posts will continue to be suitable recipes for this diet. I have been thinking about doing this for a while but have been procrastinating making this extra commitment. I am writing this here so that then I have to stick to it. Fingers crossed this works. 5.0 from 2 … [Read more...] about Carrot Cake – Gluten-Free & Low FODMAP
Lemon Tart – Gluten-Free & Low FODMAP
On Friday, Adriano complained that we were running out of baking before the weekend and that I was to bake four things this time. So I did! I baked some muesli bars for a guest post, which I will tell you about when it happens. Then I cooked some basic chocolate chip cookies, a carrot cake with cream cheese topping and this lemon tart. I will post the other two recipes later in the week. All of them turned out well and I hope I made enough to keep him happy. He raced again today and won so a lot of calories are needed to replace those lost. Until now I have been ad-free on this blog except one in the footer but in the last few days, you may have noticed an ad at the top of the blog as well. I belong to the Village Green Network, which is a wonderful group of hard-working women who blog about eating real food and living healthy. This network requires us all to have at least two ads to help towards the costs of running the organisation and I have decided to put one of them at the top … [Read more...] about Lemon Tart – Gluten-Free & Low FODMAP
