I love roaming about the foodie blogosphere when I have the time and sometimes I hit gold. This recipe from My Kitchen Stories is fabulous. I had to make it gluten-free and I reduced the sugar but otherwise it is Tania's recipe. Instead of 1/2 cup of flour I used 1/4 cup of white rice flour, 1/8 cup tapioca flour and 1/8 cup potato starch. I also used 3/4 cup of sugar instead of a full cup and used 70% chocolate. It worked perfectly. The recipe is here. On a completely different note, I went to the movies this morning and saw Gravity. I have never rated Sandra Bullock before but she was pretty damn good in this movie. It was amazingly beautiful but I saw it in 2D and apparently it is super fantastic in 3D, so go that route. One does have to suspend belief but that is fine - it is a movie after all. Be prepared to be glued to your seat for this is one very intense movie. We all know about paths not taken in the past but what about the paths in the future that separate and taunt … [Read more...] about Chocolate Brownies – gluten-free and low FODMAP
Gluten-Free Bread Rolls
Following on from my successful bread loaf last week, I modified the recipe a little and made bread rolls. The mixture was quite wet as I know it is better wet than dry and so I baked it in small moulds to firm up and then I baked it without the moulds to crisp up. I enjoyed a roll yesterday fresh and loved the yeast smell. Today, I placed one in the microwave for 35 seconds and it came out fresh inside but still crisp on the outside. It is so good to be able to eat bread again and to know exactly what is in it. On Friday at work, I made another of those stupid dietary mistakes. We had run out of baking at home so I went next door to a new bakery and asked what they had that was gluten-free (remember I am not gluten-free but I am fructan intolerant and it more or less equates to the same grain foods like wheat, rye and barley). Anyway, they showed me a couple of things and I chose an orange cupcake. It was totally delicious but I reacted to it within five minutes and felt awful for … [Read more...] about Gluten-Free Bread Rolls
Gluten-free and low FODMAP Bread
I am ecstatic. I have conquered gluten-free bread! Thanks so much to Chantelle, one of my readers, who sent me the recipe. I have made changes but the base idea is the same. I used a different gluten-free flour mix, made a few other changes and plonked it all in a breadmaker to save me work. It came out delicious and light with air holes like in gluten bread. My family approve wholeheartedly. It feels like such an achievement after so many weird results in the past. Now I have that one ticked off, I am going to make a start on a gluten-free and low FODMAP cookbook. For a while I floundered about getting the hang of this new eating regime but I feel confident enough now to do this. I am glad of this triumph because I have been feeling down lately because of the problems I am having with my neck and shoulders due to my job. In the last week, I have been doing a specific databasing task and it has almost killed me. After two solid days of it, I had to change hands and use the mouse in … [Read more...] about Gluten-free and low FODMAP Bread
Blueberry Sour Cream Tart – Gluten-Free & low FODMAP
I had the most wonderful gift yesterday. My boss gave me the day off work. I couldn't think of a better gift than the gift of time. My weekends seem to be brim full of all the things I can't do during my working week and the extra day was bliss. I did nothing much that was on my permanent to-do list. Instead I went to the movies - Woody Allen's Blue Jasmine, which was amazing and had an ice-cream, a rare occurrence. I then walked to the beach, did a big circuit past the shops and on to the supermarket to buy a few ingredients to make this delicious tart. Once home, I baked it in a leisurely manner, unlike the rush that often happens on Saturday, and thoroughly enjoyed the experience. And I can tell you something - it tasted wonderful for it. I must have baked my peaceful state right into it. It's now Saturday and all I had left to do was photograph it and eat it. I ate too much because it was so good and now have a belly ache. That's what happens when you are fructose intolerant and … [Read more...] about Blueberry Sour Cream Tart – Gluten-Free & low FODMAP
Blueberry Mousse Slice – gluten-free & low FODMAP
Once upon a time, centuries were distinguished in part by their fashions and interior design. Then things got faster and fashions and interior design changed every decade. Now we talk about last year's styles, and we have added a few other fads that change just as fast - like food fads. Each new eating regime has passionate followers who fight for their beliefs. Sometimes it is an individual food which becomes the latest power food which takes over all else. At the moment, chia seeds are one of these. Chia seeds are great for fibre (providing 38g per 100g serve). They also contain good quantities of minerals such as calcium, phosphorus and manganese. They originated from South America, where they were highly prized by Aztec groups as a source of valuable nutrition. But many other foods are just as good for us. What is special about these seeds is the gelatinous quality to them when they are soaked in liquid. This can act as a substitute for egg whites in some recipes where thickening … [Read more...] about Blueberry Mousse Slice – gluten-free & low FODMAP
Chocolate Mousse Meringue Desserts – Gluten-Free
And another weekend is drawing to a close. I suspect I have not made enough baking to keep us going all week because I made four individual desserts instead since I got this idea for another layered beauty. This time it is a brownie base, recipe HERE, a chocolate mousse layer, recipe below, and a whipped meringue topping, recipe HERE. I had just a slice off one and it was totally delicious, but to be taken in small doses, I suspect. They would make a great dessert for clients who needed gluten-free or not. Today is the first day of spring in the Southern Hemisphere and we had a beautiful clear sky but a certain chill remains in the air. Even though we have had a very mild winter I am looking forward to the warmth of summer so that I can shed a few layers of clothing. It's so much easier to throw on a dress and shoes and walk out the door than all the layers we are wearing at the moment. Wouldn't it be great if summer lasted forever? But then perhaps we wouldn't appreciate it so … [Read more...] about Chocolate Mousse Meringue Desserts – Gluten-Free
