I have decided to post tonight to give you an update on my food intolerance tests. But then I thought that I couldn't do a post without photos so I photographed dinner even though it wasn't really a recipe. Adriano is away trying to destroy his body in another mountain biking race so it was just Dario and me. I bought a cute little lamb roast - shoulder of lamb butterflied, to be exact. Then I cut potatoes up small and roasted them. I love them small and crispy. Just in case you wanted to know, we have around 4 million people in New Zealand and about 60 million sheep. That's a lot of sheep! But back to the update. I had a special limited diet yesterday and then starved this morning. I got there at 8am and they immediately gave me this disgustingly sweet drink - a full glass of it. It was pure fructose. Low Fodmap & Gluten-free Bread Rolls
Here is my fabulous grain-free and dairy-free bread. This is the second time I have made it and it was just as good this time. I even used it as burger buns. When you are making it, it is all rather foreign feeling because the flours behave quite differently from wheat flour but persist because it will work out. The dough holds together brilliantly but looks more transparent than ordinary dough. It is more gel-like. The rolls take quite a while to cook but brown up nicely. They do taste different but I really like the texture and so do Adriano and Dario. Give them a try. The rest of the burgers were made up of beef mince, water cress, homemade mayonnaise and roasted tomatoes. Roasted Eggplant Stacks and Pan de Yuca – Grain-free
The changing of web hosts has happened, not without hiccups but it should all be smooth from now on. The great thing is the increased speed of my blog, in particular behind the scenes. I used to be able to go get a drink of water in between screens changing. And it kept going off line all the time. I spoke in a live chat with my previous host and they said they couldn't do anything about it. My new host costs about 5 times as much but it will be well worth it in the end if I can work faster. Time is precious. In the photo you can see a great food stack we had for dinner. Layers of eggplant, tomato, beef burger, poached egg and a sprinkling of parsley and sundried tomatoes. But anyone can make that or a version of it. What I am going to tell you about is that lonely little bread roll over on the side. As usual the photos were taken fast before the egg cooled down or slid off the stack so I didn't think to get a shot of the inside of the roll. Beef Chimichurri, New Potatoes & Crunch Salad – Jamie’s 15 Minute Meals
I had to do it - I went out and bought Jamie's 15-Minute Meals. I made one of his meals last night and it took me 40 minutes and one part didn't work out too well so I didn't photograph it. Tonight I tried again with a different recipe and this was a stunning success. Okay, it took 30 minutes instead of 15 but that's not really too long to have all that food on the table. He says to put it all on a tray and the only thing big enough was an oven tray but it worked. Less dishes to wash too. And my Cuisinart DLC-2ABC Mini-Prep Plus Food Processor, Brushed Chrome, as always with his meals, was essential. I just checked on Amazon and these processors are heavily discounted at the moment so, if you need one, this is your chnace to get one cheaply. Three dinners in small servings – Shepherd’s pie, Chicken Sliders and Thai Crab & Shrimp Pies
Here are three dinners we have had over the last week. As you can see, I am still doing the small servings thing so I stop eating once my portion is finished. I made four of the shepherds pies so Adriano could eat two. I made three seafood pies because I decided not to eat any carbs and ate only the filling you can see in the small pot in the photo. But as far as the sliders are concerned, I made six and I ate one while Adriano ate the other five (Dario was at his girlfriend's). I still find this grossly unfair. Lasagna made by three generations of Italian women
Here is the promised lasagna which I photographed in Italy while the mother (Laura) of my sister-in-law (Sabrina) made the dough and assembled the dish. In the end, Sabrina and her daughter, Sofia all joined in and you will see the three generations working together in the photos. It was a symphony of co-ordination and much discussion, which is integral to any Italian endeavour. Laura had already made the ragu sauce and white sauce and they were sitting nearby awaiting their moment. Then she set to work. She placed a lump of cooked silver-beet (but you could use spinach) in a mini food processor with an egg and whizzed it. Once it was blended, Laura placed it into a well of flour and added several eggs, then initially mixed it with a spoon, before getting her hands involved.
