The Recipe If you are short on time but want something more than a basic chicken fillet, this is a simple coating to throw together. It sticks well and crisps up nicely. The urge came out of the blue and could only be appeased by making something yummy and pretty. My grandmother used to make a trifle when we visited for dinner and my mother always makes a scrummy trifle for Christmas day. It is definitely one of my favourite desserts. Instead of sponge I used a biscuit base which could use any gluten-free plain biscuits. If you could find a lactose-free custard, you could buy it instead of making it and that would make this a quick, very simple dessert. The Low Fodmap Diet is not a Weight Loss Program
People can confuse the low Fodmap diet with a weight loss or gain program. The low Fodmap diet is for eliminating irritable bowel syndrome symptoms, not for losing or gaining weight. In fact, it would be counterproductive to use it in that way. To learn more about this, watch my video. I found a white Christmas recipe on Hotly Spiced, a wonderful blog which you must have a look at. Charlie tells us about her entertaining family and cooks great recipes. She is an accomplished writer and keeps you on the edge of your seat with her family stories. Anyway, she made the classic white Christmas recipe with her own twist and I have adapted it to be more low Fodmap. A Low Fodmap Christmas Day
Christmas has come and gone, and what a fabulous day it was! We gathered together with the extended family and ate outside under the sun. What could be better for a Christmas celebration. In fact, we had two celebrations because my sister, Margot, her husband, Paul and daughter, Dana went to New York to celebrate Dana's 21st birthday so we had a pre-Christmas celebration a few days before Christmas together with them, and then we had Christmas day with the rest of the family. For Margot's dinner, I made a chicken, feta & brown rice salad which supplied me with all food groups and I was able to eat that with some turkey and ham. On Christmas day I took a tuna mousse and a mixed pasta salad so I was all set there as well. That's how you get around any get-together - you supply your own food and share it with everyone. On both occasions, I had a small glass of champagne and then went straight onto water.
