In my last post, I mentioned that fructmal is becoming more common maybe because of all the high fructose corn syrup which is added to most processed foods these days. John from Kitchen Riffs made a comment (in the comment section) which could explain why manufacturers are doing this when it wasn't necessary in the past. I am quoting John here: "Back in the 1980s, at least in the US, loads of people became very aware of fat in food, and tried to limit it. It’s at that time that most of the manufacturers started really adding sugar in all forms to things – when you remove fat from products you remove so much taste, so they substituted sweetness. Potato Fish Cakes – gluten-free and fructmal friendly
Here we are with my second fructmal dinner. I have discovered that people with fructose intolerance like to point out that the term actually is fructose malabsorption because fructose intolerance is something you have from birth and is extremely serious whereas fructose malabsorption is something that can develop at any time. The term is shortened to fructmal which is easier to say. 'Fructmal' and 'malaborption' both get red wriggly lines under them when I type them so I guess they are not in the dictionary yet. That's how new this is. Anyway, from now on, I will refer to it as fructmal. Adriano was yet again away for a race so it was just Dario and me. Three things that are well tolerated are fish, potatoes and spinach but I can't keep bunging them on the plate as is, so I experimented with large fish cakes which incorporated them all. Roast Lamb and update
I have decided to post tonight to give you an update on my food intolerance tests. But then I thought that I couldn't do a post without photos so I photographed dinner even though it wasn't really a recipe. Adriano is away trying to destroy his body in another mountain biking race so it was just Dario and me. I bought a cute little lamb roast - shoulder of lamb butterflied, to be exact. Then I cut potatoes up small and roasted them. I love them small and crispy. Just in case you wanted to know, we have around 4 million people in New Zealand and about 60 million sheep. That's a lot of sheep! But back to the update. I had a special limited diet yesterday and then starved this morning. I got there at 8am and they immediately gave me this disgustingly sweet drink - a full glass of it. It was pure fructose. Brazilian Cheese Puffs – gluten and grain-free
I have found yet another recipe for grain-free cheese bread and decided to cook it tonight with a simple meal of baby spinach, smoked salmon, a poached egg and homemade aioli sauce. How healthy is that with heaps of omega-3 and teeming with minerals and vitamins! I found the recipe at the Perfect Health Diet. Potato Rosti Pizza
Tomorrow I am going for a hydrogen breath test to check for a couple of food intolerances. Yes, this is a journey and I am not there yet. There is something else going on that has not yet been identified, hence this test. It takes 3 hours which is a bit of a pest because it means time off work. And it's necessary to have three sessions - the first is a control test, the second a fructose test after filling up on juice and the third is a lactose test (they are related) after filling up on milk (I think). Today I have been on a strict diet to make sure I am empty of certain food groups and I have had very peculiar meals. But I wanted to feed Dario and Adriano well despite my woes. These potato rosti pizzas worked well because I was able to eat everything except the cheese. They are simple to make, require few ingredients and got the approval of both male members of the family. Low Fodmap & Gluten-free Bread Rolls
Here is my fabulous grain-free and dairy-free bread. This is the second time I have made it and it was just as good this time. I even used it as burger buns. When you are making it, it is all rather foreign feeling because the flours behave quite differently from wheat flour but persist because it will work out. The dough holds together brilliantly but looks more transparent than ordinary dough. It is more gel-like. The rolls take quite a while to cook but brown up nicely. They do taste different but I really like the texture and so do Adriano and Dario. Give them a try. The rest of the burgers were made up of beef mince, water cress, homemade mayonnaise and roasted tomatoes. I roasted them according to instructions I found on a blog I visit often, That Skinny Chick Can Bake. Check it out for the roasted tomato recipe and for many more wonderful recipes.
