Adriano cooks on Friday, Saturday and Sunday nights. Part of his routine is to pour himself a glass of wine and open a packet of crisps or something similar to munch on. He also brings me, in my study, half a glass of wine and a few of his nibbles in a bowl. For me, this a symbol of the days when I am not working and I can do my own thing. But the crisps are not exactly healthy; in fact they are super unhealthy. So, on Saturday, I decided to make our nibbles myself and this might become a part of the routine rather than bake cupcakes or something equally decadent which are not kind to the waistline. Mediterranean Pies – Low Fodmap
I have a mission to create small portions so I can't overeat. The two dishes in the photo were for me and Dario. I made a massive one for Adriano and he ate it all without blinking. I thought there would be enough saltiness in the bacon so added only a wee bit extra salt to the egg mixture. Adriano thought it needed more but I didn't, so tread carefully with the seasoning. This really is nothing more than a fancy omelet wrapped in bacon, but it looks better like this in dishes rather than slopped on a plate. And the most important thing was that once I had finished mine, there was no more to eat. I guess this dish is gluten-free too. I had planned to serve it with a loaf of crusty bread but it got all eaten before dinner so I made some potatoes and a mixed salad. Roasted Salmon and Crispy Potatoes
I am back on board again after such a great holiday with family and visiting family in Italy. But all good things come to an end and far too quickly. Not that my every day life is to be sniffed at. I have an enjoyable job with good bosses, a wonderful husband and son and I get to blog in my spare time about food. What can beat that? Last night, I felt a need for healthy and nutritious, so salmon (all that omega 3 stuff) and spinach (made Popeye strong) were employed along with some great crispy potatoes. There's probably a little too much oil to be on a slimmer's menu but it tasted great and the scales didn't complain afterwards. Asian-Style Skirt Steak – Low Fodmap
I have never used skirt steak before but got curious about it and ventured into an unknown realm. Adriano's butcher had some secreted out the back and was surprised at the request because it is not a popular cut here. It is very flavorful but can be tough. The secret is to let it marinate for a while with a wet rub on it and the steak will tenderize nicely. It also must be grilled hot and fast and mustn't be overcooked. Why the butcher had some out the back if he thought no one would buy it was never revealed. But maybe he buys entire cows at a time and there is a skirt steak in each beast and he can't send it back. That's right - only one skirt steak per cow, but it's big. You would think this would make it rare and expensive but that was not the case. Maybe he was happy to see the back of it. Make up a strong marinade with heaps of flavour and leave it for between four and six hours. Today I am guest blogging at the Cravings of a Lunatic blog. Kim is a barefoot cook who hates eggs, tomatoes and mac n cheese and if different foods touch on her plate, she throws a hissy fit. Did you notice the name of her blog? All this plus plenty more makes her one very entertaining woman and she sure can cook. Stuffed Calamari – Low Fodmap & Gluten-Free
Adriano cooked this dish. It is a classic Italian dish with the addition of walnuts for a bit of crunch. He also made a tomato/carrot puree to accompany it. He's useful to have around. I have probably mentioned before that my parents owned a seafood processing factory after we left the farm when I was ten. During my teens I worked there in the school holidays and loved it. it made me feel like an adult. I worked in the production lines either processing wet fish or crayfish. I met a lot of colourful characters there and no more so than Sam. It's a while ago now and I can't remember if he was Tongan or Maori but I do remember his quirkiness.
