This is a Jamie Oliver recipe which I have made low Fodmap. This was from his book, Jamie's 30-Minute Meals, so I tried to make it in 30 minutes. I got out all the ingredients and equipment, put on the oven and then started timing the making, and still it took 50 minutes. I had no issues with the process and worked as quickly as possible but I simply couldn't get it down to 30 minutes. I would love to hear from someone who has managed it. Thai Red Prawn Curry with Jasmine Rice – Low Fodmap
This second recipe from Jamie's 30-Minute Meals is stunning. The flavours were so delicious I well and truly over-ate. This time I got all the ingredients and equipment ready the way he says in the instructions and I managed to shave some time off. In fact, it took around 45 minutes but I have to admit that once again I didn't do the dessert or the accompanying cucumber dish because I don't like cucumber. I am already learning to work more economically with my time and to be more efficient. One day in the future I will get one of his recipes down to the required 30 minutes. I have plenty more to practise with. Paella – Low Fodmap and Gluten-Free
Yesterday was Adriano's birthday but he was away down the island because of a race today in soldier-training country. He had a bung leg because of a fall last week in which he split his eyebrow open and distorted his little finger. Four stitches later, he came home limping, with a sore finger and black eye. But still he went off to the race on Friday and, though he didn't do well by his standards, he was still in the first twenty out of 500 racers. Anyway, I cooked his birthday dinner tonight and, since he loves seafood, I chose to do paella - for the first time, I might add. I found Jamie Oliver's recipe online and printed it out. I then converted it to a low Fodmap version and well, it turned out great. It was a bit of work but nothing too hard and oh, so tasty. For a change, I'm not making an all-in-one meal, though that is my favourite kind - less dishes, less visual mess. This is a more classic kind of New Zealand meal with an obvious lump of protein and three vegetables - in this case, mashed potatoes, spinach and tomato. But my family would moan if I stuck them on the plate without any creativity. Stir-fried Ginger Fish with Spaghetti – Low Fodmap
Adriano has the biggest race of the year this weekend - in terms of the distance anyway. He will be mountain biking for six hours straight. I know the routine by now - carbs before and protein afterwards so tonight it was pasta. I found this recipe in the Foodtown Magazine and it sure was tasty. Adriano said I had to cook it again but, for this blog, I need to cook something different every night. But he can cook it on his nights - the recipe has been passed over. Grilled Prawn Spaghetti – to celebrate Dario’s graduation
This has been a great day - Dario graduated with a Bachelor of Architecture. He spent a total of four years in formal education, receiving the rest of it at home and yet here he is with a degree. For his celebration dinner, I cooked a recipe I found in Food magazine and then we had a bought cake afterwards. Unfortunately there is no time at night to bake so bought it was. The recipe had a long name - Grilled Prawn Spaghetti with Tomatoes, Capers, Gherkins & Feta and it basically included all the main ingredients.
