I made this quiche last night with leftover cooked chicken but forgot to photograph it. However, above, you can see a slice I had for my lunch today - not as pretty as the whole quiche but just as delicious. This was born out me looking in the fridge and wondering what to make for dinner. I had the cooked chicken, a leek and we always have tomatoes, eggs and cheese so a chicken and leek quiche with tomato and cheese was created. It was a resounding success and a recipe I would make again. Adriano nagged me for a couple of weeks about making a banana cake, which is very odd because he doesn't have a sweet tooth. But he didn't let up and so I eventually caved and made it. The only problem with that is then I need to eat it too because who can resist a banana cake in the house without devouring it! The cake is already finished and I am a kilo heavier while he burns off the calories on his bike in about five minutes. It would take me an hour at my speed. Stuffed Pita Breads – low Fodmap and gluten-free
If you can find some gluten-free pita breads, you can basically stuff them with anything you like. Last night I had left over ragu sauce that Adriano had made in the weekend and rather than have pasta again, I made these stuffed pita breads with the sauce, a coleslaw I made up, tomato and cheese. They were great and I even have one leftover for lunch today, which I am looking forward to. If you have no problems with sorbitol, you could add some mashed up avocado with lactose-free yogurt or sour cream like I did. I didn't add that until after taking them out of the oven so it didn't get cooked. I enjoy many different cuisines and Mexican is among my favourites. If you eat low Fodmap, you do have to watch out for some of their ingredients like legumes and too much dairy but it is still possible to get the richness of the Mexican food while staying true to the low Fodmap diet. It's not hard to find gluten-free tortillas which are suitable for us these days, and cottage cheese and mature cheese are on the permitted lists as long as we don't overindulge. This is an easy, delicious dish which wouldn't go amiss even for guests and it seriously took me about ten minutes to put together. Oh, and it's vegetarian.
