I have been going back through some of my old folders of collected recipes and came across this mousse recipe which needed only a few adjustments to make it gluten-free. The recipe had the layers one on top of the other but I made them separately for some reason. I have given the instructions for making a layered mousse however. Note that the salmon mousse is also low Fodmap and the avocado one would be suitable for those with IBS who can tolerate sorbitol. The weather in New Zealand is just beautiful at the moment and it is such a pleasure to be alive on such days even though I spend most of my time inside working. But I can see it out my window and I make sure I get my daily walk along the beach. I have been working hard on my next cookbook and it is almost ready. I am planning on doing a video for it, which is a first and a bit scary. I have all sorts of ideas for the video but whether it will turn out like my plans is yet to be seen. Citrus Recipe Round Up – low FODMAP diet friendly
Citrus fruits can be eaten by those of us who have fructose intolerance or are on a low FODMAP diet. So I have gathered together from friends a collection of recipes which contain them. We all know that they contain a heap of vitamin C and to eat them when you feel a cold coming on but you probably have no idea that they are low in fructose unlike apples, cherries, mangoes, pears and watermelon, which are dynamite for me. In these guest recipes, there are a few things it would be better to leave out to keep them low FODMAP friendly. I will mention these after each recipe. Salmon and Spinach Quiche – gluten-free & low FODMAP
I still haven't found the time to finish my next article but I have started it. Meanwhile I have a quiche to share with you which I made at the weekend. I have a continuing love affair with pies, tarts and quiches even though I can't use wheat flour. I think I have got my pastries as good as they will ever be and my whole family have accepted them as the norm now. However, sometimes, Dario says that I should cover half the tin with my pastry and the other half with ready-made wheat pastry. I think that is totally weird and I also think the photos would look strange with a seam down the middle and with both halves looking different. Last Sunday, I went to the Taste of Auckland festival with my niece in one of our big city parks and we had a great time, eating and drinking to our heart's content. Blinis with Salmon and Sour Cream – gluten-free and low FODMAP
Recently I have been having trouble with my neck - too many hours in front of a computer with no solution in sight. One has to earn a crust. My physiotherapist has been stern with me and clear about the future if I don't take stock now of my daily activities. I work 8 hours a day, like many people, then I go home and blog and do marketing for my novels - still in front of a computer. I have a half hour for lunch so I have to split that time into three 10 minute blocks. For two of them, I have to leave the office and go for a walk and the last is for eating lunch. In between, I have to do stretching exercises. All of this is for the rest of my life. Great fun! When it gets really bad and a headache sets in, I have found that a few things help - heat, stretching, massage and wine. And what does one need with wine? Nibbles. Polenta Triangles and Tuna Salad – gluten-free and low FODMAP
On a low FODMAP diet, the choice of foods you can safely include in your recipes is limited and so it's necessary to use a little imagination when preparing meals or you will quickly become bored. So this dinner has the same good old staples of polenta, courgettes, tomatoes and fish but I have presented them differently on long plates as separate elements. This makes the food more appealing than the usual mash up of everything mixed together. This was an easy meal to create though I did make my own mayonnaise as it simply tastes so much better than anything you can buy ready-made. I am off work this week for a break and I am busy catching up on a million and one things related to this blog and to my writing. Salmon & Courgette Stacks – gluten-free & Low FODMAP
Adriano got an upgrade to business class for most of his flight to Italy, a new prince has been born, our capital - Wellington - is shaken to the core by quakes and this is day two of being at work without my boss or co-worker and I am as busy as ever and have had a headache all day. Good and bad things happen and life goes on. It's probably the sore head that is making me feel philosophical. And now the question is - will a glass of wine help or worsen the situation? I am sure my headache is from tight neck muscles and wine is a muscle relaxant so wine it is. The recipe tonight has no specific ingredient amounts because it's not really necessary to be precise. I have a special fondness for stacked food. Like with tarts and layered sweet treats, it is that visual thing - stacks look pretty.
