I thought it was about time I gave you another recipe. I bought some fresh fish and used what else I had in the fridge. I always have eggs, chillies, coriander and spinach. I guess they are my favorite ingredients for my made-up recipes. This is a quick and easy recipe that you can whip up in 15 minutes or less. Enjoy!

I don’t think I’ve ever had a fish omelet before! Love the idea — it’d make a terrific lunch or dinner. Thanks!
I saw Jamie Oliver do it but before that I had never thought of it either.
What kind of fish do u use?
I used terakihi but you may have different fish. Just use a fairly firm fish so it doesn’t break apart too much.
