It's morning tea baking day and I decided to make these little gluten-free granola balls using some of my favourite ingredients but I hadn't counted on the fact that Adriano had tried to fix the door on our stupid oven that cooks so unevenly. Even though it is completely whacky as an oven, I had kind of sorted how to deal with it. But I didn't know my husband had tampered with it. Here is the result of of the first batch. And that was after five minutes because the door wasn't properly shut and the top and bottom elements stayed on all the time. So I started again. Fortunately I had more of everything and they only take a few minutes to put together. I turned down the oven and watched them obsessively. Caramel Granola Bars – Gluten-free
You would think by now I had run out of new granola bar recipes and it could definitely happen. There are only so many dried nuts and fruit out there and the binders must be limited too but so far I have never repeated one. Adriano and Dario now expect to have the tins (Tupperware container, actually) full so they can stick their hungry hands in there whenever they want and find something to appease their appetites. Last week I made those granola bars filled with caramel and topped with chocolate. That was a mistake – they were all gobbled up by Wednesday because they were too delicious. I was brought up on a farm where visitors were offered a cup of tea when they dropped by. But never just a cup of tea. Caramel, Chocolate Granola Cups
I have had a busy weekend with four photo shoots today alone. My feet are sore from being on them all day and from our visit to the Food and Wine show yesterday. That was a great experience with food samples and tiny glasses of wine flowing in all directions. From a wide variety of cheeses to thick, rich yoghurts, spicy sausages, crackers and chutneys of all kind. The tummy expanded and the eyes swam as we moved deeper and deeper into the show. We maneuvered through the first pavilion with methodical precision born of a clear head but by halfway through the second, we could have been in the back streets of Italy for all we knew. We had no idea where we were. The limoncello was irresistible, the feijoa wine needed to be tasted in all its varieties from the sparkling to the special reserve, the cold beer called from afar. Pumpkin, Almond, Chocolate Granola Bars – fat, salt and gluten free
Granola bar day today. The verdict on last week's bars was a little divided. Adriano thought they were too hard and gave him a belly ache. Dario just grunted. You'd think after 21 years, I would be able to interpret his grunts but I guess a chap has to keep a little mystery. The bars agreed with me - no belly ache - but I have to scratch them from all future menus for the sake of my husband's stomach. Today I was determined to add plenty of moisture along with the goodness. Somewhere I saw that a recipe used pumpkin puree along with apple sauce as the liquid and I used that base. I added all the nuts, seeds and dried fruit to make a true granola bar and threw in some healthy wheatgerm for good measure. This was a triumph, even if I do say so myself. Honey Cranberry Granola Bars – weekend healthy baking
The mini cupcakes went down well for morning tea at our mother's but you definitely need two of them so I'm not too sure the mini quest works. But I won't give up. I must buy a mini cake tin for next week and remember to make half the quantity of the recipe I choose. Meanwhile, today is the serious day - morning teas for the week. Granola Chocolate Cranberry Cookies – a Gluten-Free Recipe
As usual, on Sunday I bake the healthy morning tea for the week. I decided to combine some of my favourite granola bar ingredients and make them into cookies rather than bars. Pure semantics, I know, but a girl needs a change once in a while. Adriano and Dario have come to expect the baking containers to be full. Last week we ran out before the end of the week so this time I made quite a few cookies but several have already been eaten so maybe I should have tripled the recipe. These took all of ten minutes to throw together and they looked cooked after about ten minutes but, as I have said, my oven is whacky and they could take longer in yours.
