As you may know, I see the Pacific Ocean when I look out our kitchen, dining and lounge windows. The photos above and below show the beach which is a two-minute walk from my home. In an effort to move more and help my stiff neck which is the result of hours in front of a computer, I now walk for ten minutes a couple of times a day at work and it is working wonders, along with a myriad of regular exercises. This morning, I walked down to the shops to do the shopping for my afternoon's cooking session. But first, I detoured down to the beach, hence the photos. The last photo above is standing at the end of my small village looking up the hill I take to get to my house a few minutes away. The beach is down the road to the left. Once I got home, I first baked some cookies for the week's morning teas and then got all creative. I decided to make some appetizers to go with our usual glass of wine before dinner. I made some gluten-free gnocchi and stuffed them with feta cheese, boiled … [Read more...] about Fried Cheese Gnocchi Appetizers – gluten free & low FODMAP
Lemon Meringue Cupcakes – gluten-free
My mother lives in a small apartment in a beautiful retirement village, where she has a courtyard garden with a little lawn. She has a million pots all growing healthy plants that she tends with loving care (see first photo.) Many of these pots grow vegetables and fruit. You would be surprised at what she has managed to pile into that small place including a mini-lemon tree (see second photo.) I didn't take her few lemons but bought some at the supermarket, hence how beautiful and even and shiny they look in the sixth photo with the lemon curd, meringue and cupcakes. I have no idea how they manage to take an ordinary home grown lemon like those on my mother's tree and make them look like that. It really does worry me. What is it with that wax on them to make them shiny? It is so hard to grate the rind and what is getting grated with the rind? When I buy my next house, I am going to stipulate that it comes with a fully grown, prolific lemon tree because I use so many of them. And then … [Read more...] about Lemon Meringue Cupcakes – gluten-free
Blinis with Salmon and Sour Cream – gluten-free and low FODMAP
Recently I have been having trouble with my neck - too many hours in front of a computer with no solution in sight. One has to earn a crust. My physiotherapist has been stern with me and clear about the future if I don't take stock now of my daily activities. I work 8 hours a day, like many people, then I go home and blog and do marketing for my novels - still in front of a computer. I have a half hour for lunch so I have to split that time into three 10 minute blocks. For two of them, I have to leave the office and go for a walk and the last is for eating lunch. In between, I have to do stretching exercises. All of this is for the rest of my life. Great fun! When it gets really bad and a headache sets in, I have found that a few things help - heat, stretching, massage and wine. And what does one need with wine? Nibbles. So, the other day I took the pancake recipe I used for dinner a little while ago here and made tiny pancakes then topped them with smoked salmon, a dollop of sour … [Read more...] about Blinis with Salmon and Sour Cream – gluten-free and low FODMAP

Chocolate Custard Samosas – gluten-free & Low FODMAP
Last week I nailed gluten-free, low FODMAP muffins and yesterday I made great gluten-free pastry. I have tried several different pastries over the months and they have been fine but this one is my favourite so far. It is light and holds together well. I created my own chocolate custard by using what I had in the pantry and fridge and it too worked out well. I have had nothing but compliments for these. The recipe made about 25 and there are already only a handful left. I guess I will be baking midweek again. Tonight on TV I saw this documentary of a beautiful love story which has endured for 70 years although they have been apart for almost all of it. They fell in love during the war and were separated when he went into secret training for the D-Day landing. He wrote letters to her via her parents and they destroyed them because they didn't approve of the relationship. She was distraught, believing he had found someone else. Eventually they both married other people and had long, … [Read more...] about Chocolate Custard Samosas – gluten-free & Low FODMAP
Cheese & Black Pepper Crackers – gluten-free & low FODMAP
I found this recipe for crackers at the blog, Kumquat, but I changed a couple of things. I didn't add the whey protein - mainly because I don't know what it is - and also I used half Parmesan and half mozzarella instead of only Parmesan so they wouldn't be quite so strong and, in fact, they were just right for me. The starch is 50% tapioca flour and 50% almond flour so a few crackers don't constitute too many nuts. I took these gluten-free crackers on my monthly visit to see my eighty plus year-old Uncle Joe. He always supplies a bottle of wine and my sister, who accompanies me, usually supplies some homemade cheese. I have two living uncles – Joe and Jock, my mother’s brothers. They are both in their eighties and both have the courage of lions and the daring spirit of Indiana Jones. Joe is about to once again visit his brother who lives in Zambia and who is Zambia's oldest pilot. Jock flew for Tshombe in the war of the breakaway state of Katanga against the central Congolese … [Read more...] about Cheese & Black Pepper Crackers – gluten-free & low FODMAP
