If you can find some gluten-free pita breads, you can basically stuff them with anything you like. Last night I had left over ragu sauce that Adriano had made in the weekend and rather than have pasta again, I made these stuffed pita breads with the sauce, a coleslaw I made up, tomato and cheese. They were great and I even have one leftover for lunch today, which I am looking forward to. If you have no problems with sorbitol, you could add some mashed up avocado with lactose-free yogurt or sour cream like I did. I didn't add that until after taking them out of the oven so it didn't get cooked. Low Fodmap Moussaka
Adriano and I were watching a cooking competition called My Kitchen Rules on the television and one of the contestants cooked a Greek moussaka dish, which the judges weren't very happy with. I said that I could make a better one than that and Adriano said he wanted it the next night. So I had to back up my words with action, and the next evening saw me making a moussaka. An hour and a half later, this was the beauty that emerged. Why does everything always take so much longer than expected? Anyway, the judge (my husband) couldn't complain about this moussaka and I didn't have to eat my words, as well as the dish. I couldn't help myself but had to add my own touch in the form of spices, which were not very Greek, but sure lifted the dish above average. 5.0 from 2 reviews Low Fodmap Moussaka Print Author: Suzanne Perazzini Serves: 6 Ingredients For the mince 500 gms/17.6 oz minced lamb 3 spring onions, green part chopped 1 tsp garlic-infused oil 1 tbsp cooking oil … [Read more...] about Low Fodmap Moussaka
An Article on the Low Fodmap Diet & Meatloaf Roulade
A few months ago, I was approached to write an article about the low Fodmap diet for the Free-From Heaven magazine. Well, the issue has just been published and is out in shops for sale now. I am excited that they used my copy basically word for word and didn't change anything, which means all the information is accurate. That's the cover on the left in the image and the first page of my article on the right. They have even included a couple of my recipes in their entirety. They have made a lovely job of the layout too so I am a happy chappy. Meatloaf Roulade I got the idea for this from www.thehealthyfoodie.com but used quite different ingredients to make it low Fodmap. I pre-prepared it and left it in the fridge so I had nothing to do come dinnertime except stick it in the oven and take it out. It is a one-dish meal because it has the protein, carbs and veges all in together. It looks a bit messy in the photo and it did spill potato out one side but the rest held up pretty … [Read more...] about An Article on the Low Fodmap Diet & Meatloaf Roulade

The Connection between IBS and Reflux & Veal Roulades
Studies show that there is a connection between GERD (reflux) and irritable bowel syndrome. The chances are that, if you have symptoms of one of these conditions, you could also have symptoms of the other. Have a look at my video to hear more about it. Transcript of the Video Through my conversations with people with IBS, I have found many also have GERD or reflux. The Connection According to a 2009 study published in Digestive Diseases and Sciences, a first diagnosis of either IBS or GERD significantly increases the risk of a subsequent diagnosis of the other condition. This coexistence suggests that the two conditions may share a common disease mechanism. What is GERD? Just to clarify, GERD is a disease that may cause significant damage to the esophagus over time. What happens is that the stomach acids back up into the esophagus due to the lower esophageal sphincter muscle not working well and so lets the acid come back up. Antacids Many people take antacids for reflux … [Read more...] about The Connection between IBS and Reflux & Veal Roulades
